Songs for Swinging Bakers

The arrival of guests chez nous today has given me a good excuse to do some baking.

Hub and I have been trying to cut down a bit on indulgences recently so I have not been baking as frequently as I used to.  But it is always nice to be able to offer home-cooked goodies to family and friends, isn’t it.

Here is my freshly-glazed lemon drizzle cake – yum!  I used Mary Berry’s very reliable recipe, with which I always get good results.

Baking, warts and all…

First off, if ever there was a title that needed its punctuation, it’s the one for this post! If you don’t know what I mean, just contemplate what I might have been be writing about if I had missed out the comma….!!

Anyway, that’s enough grammatical ticklings for one night.  Today my apron has been all a-frenzy in the kitchen in preparation for a visit by my lovely knitting friends tomorrow.  We have not seen each other since before Christmas and I can’t wait to catch up with them.  Unfortunately one of our number can’t make it – it is always so difficult to find a slot when we are all free.  We decided to carry on anyway on this occasion and will look forward very much to being all together hopefully very soon.

Quick and Healthy Dinner Recipe?

Yes please!!

Here’s a meal that Hub and I are rather addicted to at the moment – Prawn and Coconut Laksa.  It has all the right ‘ingredients’:

  • quick
  • healthy
  • easy
  • very tasy

What’s not to like?

I took this photo of all the actual ingredients tonight before getting stuck in. But so eager was I to get on with it, that I left out two key things: garlic and coconut oil.


They are included in this photo showing everything chopped up and ready to go.

“Overnight Oatmeal”

I love a good breakfast, particularly when there is minimal effort involved in preparing it. This is probably one of the reasons why Hub and I really enjoy eating out for breakfast so much at weekends – we are spoilt for a choice of fabulous eateries to visit here in Edinburgh.  Why would we bother to stay in?!?

Of course one cannot dine out all the time and it is fun to look for ways to enliven this most important of food events.

In recent times, I have fallen back in love with cooking and baking.

I went through a period where I did neither.  In fact, I hardly stepped foot in our kitchen – this was either because I was unwell or because I was travelling a lot with work.  My husband was a total star, cooking us lovely meals and making sure we did not waste away, while also holding down a mega-busy job.

These days, my circumstances are different, and I am pleased to have time to return the complement by cooking him nice dinners and producing yummy baked goods.
